This is possible with an Action List. Something like: Select by Page Orientation > Landscape > and you can then define which page box you want to use, say Trim Box Rotate Page > -90, 0, 90, 180. you pick. I just had another look and it's not possible currently. Even inserting a blank page can't be defined by a selection. The Action doesn't allow inserting based on a selected page, although it would be a nice addition.

This is one of the challenges of working with Action Lists in PitStop Server, there is no ability to open a file and grab content.
What you could do is open an existing Action List that has that functionality and edit it, or make an Action List in PitStop Pro and import it into PitStop Server.

I'm afraid that PitStop version does not support High Sierra.
You could try updating to PitStop 13 update 2, that doesn't support it either, but you have more chance.
If you really want it to work, you'll need to update to PitStop 2017

I would suggest you contact Enfocus support for this one. support@enfocus.com
The cli is something most users don't have experience with, so they would be your best bet.
They can also dial in and look at your system if necessary.

Only way I could see to do this would be to output an XML for each page and then build an overall report from them using another tool or maybe Switch if you have it.
Also worth noting that the original documents might not all be the same size, so you might need multiple values for documents
