I tried that but the problem is that the file names contains several underscores followed by numbers and you can’t use regex look back in Switch.

I have a PDF containing 56 pages. If you just want to convert all text to black a simple action like this will do that:

I don't think you can use wildcards, but if the text you want to remove is written with a font and/or in a size that is not used for anything else in the dokument, you could use that information to select the text and remove the selection.
