The Inspector shows the colors and colorspace that the object uses.
It doesn't make sense to show anything else does it?
If you want a different color space you just need to convert or map the object to it!
You can do that under the 'Actions' option on the right, and many other ways as well.

I feel your pain, back in the day we used to do wet proofs and 'progressives' to show the different separations to customers. It's a little harder digitally! Must be a nightmare to produce? This is a situation where an online PDF proof would be much easier, the customer could turn the separations on...

You don't really need the Art and Crop Box, so I would get rid of them unless you have a reason for keeping them.
This (attached) Action List resizes the Media Box as described and removes the Art and Crop.
If you want to remove that Misc information as well, that's doable.
