Changing Print Page Size

I have a file that has pages sized at 8.75 x 11.625. I would like to make the pages a standard US size of 8.5 x11". It appears reducing the page size to my standard would not impinge any of the content. What steps in Pitstop ver 18 do you recommend

Do you mean that you want to change page size AND scale everything down to that format?
If that's the case, use "Scale to fit page size" with "Scale content according to page boxes" selected.

No, I was thinking of just trimming the page size to 8.5x11.
What would be the steps to do that?

Change trim/media/crop boxes to your desired size and that's it. Center page boxes if needed.
