Is there an Acrobat or Pitstop tool I can use to see the color mix of an object in a pdf. Seems like I saw one that could tell me what the rick black mix is versus what I need it to be. Or for that matter any color combination. And then I could use the global change in Pitstop to correct such.

In PitStop. If you select a vector shape or a font you can see the color breakdown of the object in the Inspector.
You also have the eyedropper tool which you can use on an individual object or on a position on the page to see the ink coverage of multiple objects that may overprint/knockout or blend.
