Is anybody familiar with creating an interactive PDF specifically with click-able hyperlinks? Ideally I'm looking for a way to automate the process so that a PDF with various web pages can become hyperlinks that would link to and open the webpage.

Adding hyperlinks to a PDF is a standard functionality in Acrobat, but I'm not quite sure what you mean, when you say "a PDF with various webpages"? In order to automate any process the URLs will of course need to be available somewhere.
