Hello,
when I use CMYK conversion (Pitstop action) on a file exported from Indesign (default profile), the colors become very faded.
Below is the starting file, the result and my default Pitstop settings.

Which preliminary actions in Pitstop are necessary to avoid this color difference ?

Your settings are fine and here they work.
Can you post the converted file please?
If possible try on another computer.

Your screenshot showed PitStop Server preferences, so are you doing the conversion in PitStop Server instead of PitStop Pro?
Are you by any chance using the PitStop Server configurator in Switch?
If so, then it is necessary to set color management settings in the configurator itself. This is necessary because the configurator doesn't use the general PitStop Server color management preferences.

I hadn't seen that it could be set in the PitStop Server application's preferences, and besides, it didn't use the general preferences.
