I think this can be done with an action list. I have PitStop Server but not PitStop Pro.
There is an action "Remap color". Here you can select channels – Cyan, Magenta, and Yellow.
My thought was to map these to spot color None. If not that, then some other spot color and then map that to None.
The problem is I cannot use the Spot Color option in Remap Color. When I select Spot, it shows a white swatch and there is no name. I think that is the problem. There is an error "Line 2 incomplete action". How can I get a swatch with a name to use? I find no way to add User Swatches in PitStop Server.

In the "Remap color" Action you can go to the color database from the button with the 4 colored rectangles.
Of course it shows a white rectangle in the color you picked because that is its color.
There, if you have not already done so, create a spot color "None" in the Local section with the alternate color space DeviceCMYK with everything set to 0%. Select that one as the color to map to.
