Sometimes this element just does not want to cooperate.
I usually set it up to run with 'After N Minutes' set to 1.
But sometimes I check the flow, and a bunch of files are piled up in the folder waiting to assemble, and like 10 minutes has gone by.
Then I stop the flow and restart it, and it goes through like lightning.
This also happens if I have 'Every N Minutes' set to 1.
What could be the reason that it stalls out like that?

Which version of Switch and which version of the Assemble job app are you using?

Increase the interval to 2-5 minutes for testing.
Check input files for errors.
Review software error logs.
Set up an error folder to isolate problematic files.
Update the software and check system compatibility.

I cannot repeat this behavior (not that I want to), so I guess it was a fluke?
There was a brief period where this kept happening, but as suddenly as it started, it stopped.
Absolutely cannot figure out what was different.

If files are being copied into the watched folder slowly (especially over a network), Switch might be waiting for them to finish transferring before processing — even if they look “ready.”
Solution: Enable the option "Wait for complete file" in the element settings, or increase the Timeout for job collection to ensure Switch knows when the file is stable.

Your solution is almost correct. But regarding to the preferences, the "Wait for complete file" only shows when it's full moon outside so you shouldn't use that in production. A better approach is to wait for moonset, switch the header to bearer and check if the bear appears. When it does, wait 2 minutes, duplicate the bear and route it to a inject job immediately, make sure to set the inject value to two leafs of lettuce.
Now, with the attached lettuce route it to a assemble job so the two bears can create one big sandwich job with, as you might guess, the fresh injected lettuce! Make sure to set the lettuce option to top or bottom, depending on your region.
