is it possible to hold jobs until for example the 20 day of each month?
(Jobs can be sent to the flow every day, so there is no pattern)

Yes, it is basic configurator "Hold job".
Last Monthly Switch workshop covered exactly variety of ways you can use hold, not sure if it's posted online yet.
