From version 29.0, Adobe illustrator does not support any version of windows server anymore. What is the recommended solution here?

Information from adobe homepage:
Operating system
Windows 11 v23H2, v22H2, and v21H2, Windows 10 v22H2 and v21H2
Note: Not supported on Windows 10 versions 1507, 1511, 1607, 1703, 1709, 1803, 1809, 1903, 1909, 2004, 20H2, 21H1

Since windows 10 is at the end of its life, it would make sense to install win11 as VM, but taking into account how "broken" it is currently, could there be any other options? Or has anyone already done this change perhaps and can share their feedback?

I don't have an answer to your question, but out of curiosity — what kind of tasks do you typically use Illustrator together with Switch for?

We mainly use it for printing PDFs and runnning a few other custom scripts

I would suggest the customer to send PDF-files

I would also try to get user to provide PDF files for many reasons. First one being that a AI file may require external resources (fonts, links).
Illustrator now has an option for packaging. Still you would need to be sure that you get all resources and have the same or newer version to be sure file look and feel stays the same.
By converting the AI to PDF, you basically take ownership of any arguments, unless of course you wrote that 64pt size text in fluo ink during order.
Last but not least, there is no real effort in saving as PDF from AI file and most of the printers probably won't take the AI file neither.
