I realize there is a Hold Job tool that I can leverage to have a flow run for example every 2 hours. But is there a scheduler tool or something similar to allow me to setup a flow to run at say every Mon, Wed and Fri at 8am and 1pm? Or maybe every day at specifically 6am and 6pm?

On the Hold job configurator you can set that on the outgoing connection. You can have several connections from one hold job..

And there is also "Inject job": on the outgoing connection you can also trigger the creation of a dummy job at a certain time. When used in such a case you can leave out the incoming connection.
